Alex Dierkhising is marking his 50th continuous year in the Calistoga restaurant business.. With two brothers, Drake and Mark, the first endeavor was the Silverado Restaurant on Lincoln and Washington.serveing breakfast, lunch and dinner for 20 years. It was among the first “Grand Award” recipients from t Wine Spectator magazine for its thoughtful and expansive wine selection. Drake left the business early on and eventually opened the popular Cafe Sarafornia in Calistoga featuring breakfast and lunch. In 1983, Alex and Mark opened their second restaurant, All Seasons Bistro and Wine Shop–on a different corner of Lincoln and Washington. It featured local products and a seasonal approach to cooking and more recognition for its North Coast wine collection. By 2006, Mark was in Santa Rosa and opened his extremely popular Dierk’s Parkside. 1996 presented another opportunity (for yet a third corner of Lincoln and Washington) and the current Hydro Grill commenced in the historic brick building. American, Latino and Asian flavors influence the menu with unique spirits, craft beers on draft and popularlly priced wines that have been joyed by many Wine Country residentss. It is their knowledge, creativity and love of this land that has made this area a unique haven and a restorative experience for so many. Hydro Grill was named for that hydrology.
